We cannot talk about Parre’s tradition

without thinking about its local delicacy par excellence, a peculiar type of casoncelli known as “scarpinòcc”, so called for their shape resembling cloth shoes sewed by women of the town for their husbands and children.

“Scarpinòcc” differ from traditional casoncelli both in seasoning, which consists of butter and plenty of cheese, and in the meatless stuffing.

The recipe

The Scarpinòcc, a peculiar type of ravioli, is a traditional delicacy of Parre. The name refers to their shape vaguely resembling handmade cloth shoes used here until a few decades ago. Born in a rural context, Scarpinòcc are similar to “casoncelli”, but they actually differ from them in filling, which is devoid of meat and cold cuts. Indeed, Scarpinòcc filling is made of grated cheese and breadcrumbs, thus being yellow with greenish tones due to the presence of parsley and otherspices. Ingredients • for the pasta: soft and hard wheat flour, eggs, butter, and milk;
• for the filling: : Grana Padano cheese, breadcrumbs, parsley, butter, table salt, eggs, garlic, spices, and milk. The ideal seasoning consists of melted butter, sage, and grated cheese. This is a poor dish that was, however, prepared on special occasions in Parre. They are still so appreciated and offered by top-level restaurants. You can even taste them in Parre during the Scarpinòcc Festival, an annual culinary event in August. This product obtained the quality brand “Bergamo città dei Mille… sapori” (Bergamo, city of a thousand flavors) conceived and promoted by Bergamo Chamber of Commerce

You can taste Scarpinòcc in every restaurant in Parre or during the Scarpinòcc Festival that takes place yearly on the third weekend of August. You can also find them in local grocery stores.
